tomato peach tarragon salad

For a few summers now my favorite thing to make (and eat!) has been a watermelon, feta, tomato, and basil salad.  Goat cheese is pretty damn good in it too. This summer I thought I’d branch out and make other fruit and vegetable salads. Every single one of them was delicious.

The basic formula is fruit + veg + herb + olive oil + salt.  Here are a few that have been extra good (they all have a glug of olive oil and a sprinkling of good crunchy salt on top):

  • purple cabbage, pluot, red pepper, and cilantro–this is more of a slaw than a salad

  • tomato, peach, and tarragon (pictured)

  • cucumber, mango, mint, basil, and maybe a fresh chili or two  (rice vinegar or lime juice is good on this one)

    I just saw a similar recipe for tomatoes with peaches and I’ve never thought of that combo before. Sounds delightful!

    stonefruit, sugared pecans, mint, and goat cheese on arugula.

    cabbage, halved grapes, chives, and a creamy blue cheese.

    I’ve been doing strawberries/arugula/blue cheese/pine nuts with olive oil & balsamic.
    And not exactly a salad but same kind of idea, and crazy delicious: figs or melon slices wrapped with prosciutto, served with freshly ground black pepper, olive oil & balsamic. a little basil is good with either of these too.

    Lettuce with mango, goat cheese and chipolte ranch dressing. Or just mangos with lime, S&P, pepper sauce (not hot sauce), and green seasoning (culantro, cilantro, cubanella peppers, green peppers, onion, tomatoes, garlic, S&P). Mango season is over here in south FL, I am so sad.

    I’ve thought for a long time that “I hate salads”, but I guess I just hate the ones we make (and find available in restaurants) over and over again. These sound more interesting, and even though I’ve enjoyed salads with fruit, I’ve never really taken the plunge in my homemade salads. Now is the time!

    No fruit in this but pretty darn tasty: cold beets, cooked kale (or chard), goat cheese, with a balsamic vinagrette.

    I like the cabbage suggestion. Any other suggestions for someone with 3 cabbages in her fridge–and totally sick of cole slaw?

      Black bean tacos with feta and cabbage. Mash black beans with a little cumin add lime juice and olive oil, top with coleslaw, green onions, cilantro, feta, and hot sauce on tacos shells. Viva la fiesta!

    I have two favourites. One is a Jamie Oliver recipe with peach, prosciutto, rocket (arugula) dressed with olive oil, vinegar, salt and pepper.

    The other is watermelon, black olives, feta (or goats cheese) thinly sliced red onion, olive oil, balsamic vinegar, salt and pepper (not sure of the origin of this one but it’s delicious)….

    Orange carrot and purple carrot julienned. (Purple carrots care of my heirloom vegie farmers market farmer, amaaazing but just use normal yummy carrots if you can’t find a purple one).

    A crunchy apple (like Fuji or Pink Lady or Granny Smith) also julienned.

    Loads of mint, parsley and a bit of coriander (aka cilantro).

    Mix dressing of extra virgin olive oil, lemon juice, wholegrain mustard, salt, pepper and orange juice to taste.
